Recipe for preparing Unripe Plantain and vegetable pottage




This is the recipe for preparing Unripe Plantain and vegetable pottage

Ingredients:


  •          4 unripe plantains chopped
  •          Chicken stock
  •          Cooked and diced chicken
  •          4-5 large carrots
  •          Blanched greens(1 bunch)
  •          2 large onions
  •          Tatashe, runner beans and green pepper
  •          15-20 prawns(fresh or dry)
  •          Seasoning
  •          Vegetable oil if not enough fat from chicken

Method of Preparation


  1.       Put chopped plantain to boil in chicken
  2.       Add sliced onions and allow to cook
  3.       After a while add diced carrots, cut runner beans and green pepper, cleaned prawns, parboiled chicken and seasoning
  4.       Mix well and allow to cook
  5.       Add cut blanched greens last and simmer 2 minutes
  6.       Add a little vegetable oil for shine if needed,                 The meal is ready
  The meal is ready
