This is the recipe for preparing Unripe
Plantain and vegetable pottage
Ingredients:
- 4 unripe plantains chopped
- Chicken stock
- Cooked and diced chicken
- 4-5 large carrots
- Blanched greens(1 bunch)
- 2 large onions
- Tatashe, runner beans and green pepper
- 15-20 prawns(fresh or dry)
- Seasoning
- Vegetable oil if not enough fat from chicken
Method of
Preparation
- Put chopped plantain to boil in chicken
- Add sliced onions and allow to cook
- After a while add diced carrots, cut runner beans and green pepper, cleaned prawns, parboiled chicken and seasoning
- Mix well and allow to cook
- Add cut blanched greens last and simmer 2 minutes
- Add a little vegetable oil for shine if needed, The meal is ready
